If you have any concerns over soya and tofu, then do read this excellent 'Soya & Health' article.

Fermented soy products are best, and avoid soy processed with hexane (i.e. buy organic).

Why not cut cubes of tofu, marinade in salad dressing (eg. virgin olive oil, cider vinegar and mixed herbs whisked in a salad bowl), then tear salad leaves in, etc. and toss.

A sort of vegan cheese salad... you could even steam the hard tofu using a steamer basket in/over a saucepan of boiling water, until softer, or perhaps steam after marinading to make a 'warm cheese' salad.

I'll have to try steaming the tofu over 'flavoured' (eg. garlic) water, to see if it absorbs the essence.

Hold on... maybe steamed tofu cubes could be made in to vegan marsh mallows... I'm thinking vanilla essence, beetroot juice/pink food colouring, etc. :-)

Tofuphobia n. A pathological fear of trying tofu... just in case you don't like it.

Yes, tofu is always best marinated, though I do sometimes steam cubes of it which can then be dipped in a small dish of soy sauce as you eat - it's surprisingly good, especially with an oriental dish. It really does depend on the brand, they can vary a lot taste wise, in a lot of cases. Fermented soy products are best, and try to avoid anything processed as they might have used hexane.

Tofu is NEVER meant to be eaten plain! I love tofu but I thought I'd join just to point that out...

I have been really successful with the tedious routine I follow to make my tofu really soak up the marinade: As best you can, mash out all the liquid, wrap and freeze the tofu, remove from freezer and repeat the process, then use your favorite marinade. Freezing changes the texture, and increases the amount of marinade absorbed.

I have been marinating tofu lately in hoisin sauce, or teriyaki, or pineapple mango teriyaki, or soy sauce, or green onion and garlic teriyaki. The best tofu I have ever had is Sunrise tofu extra firm( makes other extra firm tofus look like silken) cubed like sugar cubes for maximum marinating. Then I take some frozen stir fry veggies, with tofu and all the marinade( add corn starch to thicken sauce). Put over some white rice. And you have a delicious vegan dinner! I love marinated tofu!
