The following recipe is a little unhealthy, but it's delicious! Try cashew cheese too...

Fried Cassava (Yuccas) With Peruvian Huancaina Sauce

Ingredients

  • 1-2 cassava
  • vegetable oil
  • salt
  • 7 fresh yellow chillies, seeded and devained
  • 300g vegan cheese (ricotta or feta, preferably)
  • 2/3 cup soy milk
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • pepper

Directions

  1. Peel and rinse cassava. Cut into 2 or 3 pieces, depending the size. Cook yuccas in salted water until soft and tender when pierced with a fork. Drain and cool.
  2. Cut cassava in ½ x 2 inches (1.5 x 5cm).
  3. Heat oil in a skillet and fry cassava until golden. Season. Drain fat in paper towel.
  4. Cassava sticks may be frozen until ready to use. Remove from freezer and place immediately in hot oil until golden and crispy.

Serve with Huancaína Sauce as an appetizer -

  1. Place chili in a blender. Pour milk and blend.
  2. Sauté onion with garlic in oil until cooked.
  3. Add this mixture to blender together with the cheese.
  4. While blending add oil until a creamy sauce is obtained.

LOL, it's time for my second singles event already, which happily lands on Vegan Pizza Day (Saturday 30th June). We'll have more Karma pizzas and we've already got 3Kg of Bute Island's new 'Melty' vegan cheese (also sold as part of Tesco's chilled Free From range, along with 5 more of their products) pledged :-)

We had Vegusto, Vegourmet, Redwoods' Cheezly, Bute Islands' Sheese and Toffuti at my recent singles event in Hampstead.

The first three were used on Karma Free Co.'s pizzas and all proved very popular. I found Toffuti mozzarella worked really well for cheese on toast (melted and went brown, under the grill) and Sheese mozzarella worked well in a toasted sandwich maker (didn't ooze out so much, as it doesn't melt as well).

Volentian Rudee, who owns Vx in London, reckons that Vegourmet is cheaper than, but just as good as, Vegusto (he sells both). Daiya, made in Canada, is popular in the States, but they don't currently have spare capacity to export to Europe (though it's probably too plasticy for UK tastes).

Well I did try once, I very nicely and extremely politely asked if they would mail some products, was expecting a nice jokey sorry back, but got a flat straight resounding "NO" without any explanation, as a reply instead :o(

 

Then when I didn't get my change from them at a vegan fair........I decided they'd lost a fan :o/

Vx do postal orders, though the cheeses aren't currently listed. I'm sure you could try talking Rudee into sending some out, though I imagine he doesn't do it due to limited stocks (and storage). I imagine that not all items are suitable for ambient (ie. not chilled/frozen) shipping either.
